Do you freeze the bottom half of the unit before you make the ice cream or does the electrical portion of this unit freeze it? The instuction manual is lost Please help with detailed instructions of how to make ice cream with the K77102 ice cream maker thank you

The ice cream is granular in texture-

Hello!
I actually own the same ice cream maker, and it has made some very good ice cream for me. The most likely causes of grainy ice cream are too short of a time in the machine or recipes with incorrect proportions of water, fat, and sugar.
Firstly, make sure that you are using one of the recipes provided in the maker's user manual, or a different recipe from another source which says that it works with all ice cream makers. Following these recipes will ensure that your ice cream base (the liquid that you pour into the machine) is the correct consistency and composition for freezing. For example, too much sugar could cause improper freezing by oversaturating the solution, or too much fat (or fat incorporated incorrectly) could cause the mixture to become grainy or separate.
If you are using a recipe that calls for eggs, make sure that you mix them with the listed amount of sugar thoroughly before tempering them with the hot cream/milk solution. Additionally, make sure that you only pour a little bit (quarter - half cup) of the solution into the egg mixture at first, stirring thoroughly, before adding the rest. This assures that the eggs do not curdle when heated, which could cause a grainy texture.

Finally, make sure that you are freezing the mixer bowl overnight, using chilled ingredients, and allowing the machine to run for the full 20-25 minutes. The ice cream should be a bit softer than the consistency of soft-serve when you take it out of the machine - easily scoopable with a spatula. If you like it firmer, an 8 to 48 hour freezer session will greatly improve the texture in my opinion.

An electric ice-cream maker is a tabletop appliance for mixing and freezing ice cream at home. A small electric motor drives gears that turn the canister filled with the ingredients for ice cream. The canister is surrounded with ice and rock salt to freeze the contents. Alternately, a hand crank on top replaces the motor.
Although durable, ice-cream makers can require a few repairs. A common problem is damage to motors or gears from mixing too large batches of ice cream or from neglecting a jammed mixing paddle. The electrical cord can fail and motor bearings can dry out.

  • Use your cylinder bowl correctly. If the cylinder isn't handled properly, your ice cream won't set. Make sure it is dried completely after washing so ice doesn't form on the walls, make sure to leave it in the freezer overnight before making ice cream and don't leave the bowl out at room temperature before using.
  • Check your freezer door. If it isn't sealed properly, or if it's constantly being opened during the freezing process, your ice cream can't set properly.
  • Handle the ingredients correctly. Don't let the ingredients warm and don't overfill the bowl. Check the manufacturers recommendations for the maximum bowl capacity.
  • Clean and dry your machine thoroughly. Use a damp cloth on the motor assembly; never immerse. Make sure to wash the lid, blade and cylinder according to directions and make sure the cylinder is absolutely dry before freezing.
  • Contact the manufacturer's support site only after you have exhausted your options. They may walk you back through the steps you've already taken, but at best your problem will get fixed far more quickly because you eliminated the easy problems in advance.

Homemade Vanilla Ice Cream

3 cans fat free evaporated milk
1 quart fat free half and half
1 quart whipping cream
1 cup Splenda
vanilla to taste

Mix all together. Follow directions for electric ice cream maker. Makes 1 gallon. To make chocolate ice cream, add sugar free chocolate syrup in recipe.

The bowl doesn't freeze in my freezer.

The noise you hear from you machine is provably just the mixer but not the compressor the bowl and the mixer has different cooling systems to check the you got to see your contractor kicking in when you activate the dispenser handle. reply to Art after check that

Over freezing ice cream....

Any water is going to solidify the mixture. Make sure you use heavy whipping cream, and not half-and-half or some other substitute.

As far as the mixture freezing onto freezer bowl - use the supplied spatula to try to scrape it off, but I generally have to count that portion out as lost. Running warm water over it will quickly wash it off.

Gets only cool not cold

Vanilla Bean Ice Cream
makes 1 generous quart
4 egg yolks
2/3 cup sugar
2 cups half-and-half
1 vanilla bean or 2 teaspoons vanilla extract
1 cup whipping cream
In a bowl, beat the egg yolks until blended and mix in sugar. Heat the half and half, stir into the egg yolks, and pour into the top part of a double boiler. Split the vanilla bean and scrape its seeds into the cream and add the bean as well. Place over simmering water and stirring constantly, cook until the mixture is custard-like and coats the spoon. Remove from heat and refrigerate until cold, or several hours. Remove vanilla bean. If using vanilla extract, stir it in at this point. Just before ready to churn; stir in the whipping cream. Freeze according to directions for your ice cream freezer.

After a hour and half we still do not have ice cream

You need to make sure you continually refresh the ice as it melts, you also need to make sure you put salt on the ice. The salt makes the ice colder so that the ice cream can freeze up better.
