SOURCE: Viking Wine Cellar Temperature Near-Freezing
Viking wine coolers are made by Marvel. They all had issues with freezing the contents. If you replace the electronic cold control system it will be fine.If you don't, it will freeze the wine popping the corks and leaking in the unit.If you get the parts from Marvell they are much cheaper.

I just started having the same problem with my 48" frig/ freezer Viking Designer series 2 years old- this has been a hot summer, we were not home much and the AC in the house was set higher 78 degrees so the frig I guess had to work a bit more - when I open the door to the frig water droplets acually run down the interior of the door and the box insde is always damp - I also have stress cracks in the interior shell of the frig - repairman is trying to get Viking to fix it- it has been a year now and it still is not fixed- the stress cracks were caused by improper insulation application to the inside of the frig according to the repair people- Also my handles have pealed - like the stainless steel is not really stainless steel - Any ways could the temp in the house changed - does not mean the frig should not work well - For what it costs, I expected better
SOURCE: 2006 Viking VUAR 141 bar fridge not cooling enough
The thermistor is looking for a very cold temperature before shuting off for the cycle defrost to work correctly. Thus if if shuts off early I would suspect the thermistor or the potentiometer. The pot is connected to terminals # 6 and 7 and should have a resistance over 90K-ohms when set to the coldest position. The thermsitor should have a resistance of 5.6K-ohms at 0 C and near 2.2 at 20 C. The control rarley fails but if it has been recently replaced the DIP switches (there are four of them) may be in the wrong position. If they are in question, try talking to technical customer service at Marvel (they made the unit). Their number is 800-223-3900. Your Viking VUAR 141 should be the same as their 60AR. The thermsitor is usually the most troublesome component but usually fails in the opposite way causing the unit to run too cold.
PS does the cooling fan shut off the same time as the compressor? if not, then the compressor overload is the issue...the the temperature control. If both shut off and on at the same time then you are on the right track.
Good Luck - Subdriver
The beverage center and wine cellars have a temperature display for each zone. 12 volts
AC is supplied to the display board from a transformer in the unit compartment. The displays are only temperature displays and have nothing to do with any cooling function. A thermistor is used to sense temperature for each zone. The thermistor for the bottom zone is located inside the lower portion of the separator. The thermistor for the top zone on the wine cellar, (mid zone on beverage
center), is located in the upper portion of the separator. The thermistor for the beverage center upper zone is located on the inside of the 2-piece evaporator cover. It is on the right-hand side.
The mid temperature for the bottom zones on either unit are 60? Fahrenheit plus or minus 5 degrees. The mid temperature for the mid zone on the beverage center and the top zone
on the wine cellar is 45? Fahrenheit plus or minus 5 degrees. The mid temperature for the
top zone on the beverage center is 38? Fahrenheit plus or minus 5 degrees. I think at tis time you should check each section with a pocket size digital thermometer to cofirm tha the mechanical thermostat is within calibration. Click Here=> 4344690 Temperature Control

I believe the problem may be in the PCB transformer shown at the bottom right corner of the wiring diagram. It is possible o change the transformer but I have not been able to find the board that powers the LED temperature readouts. If needed let me know and I will call Whirlpool mfor you, Thanks, Sea Breeze
