I overlooked this too. Set into the foam packing material is a stem made just for the shredding disk. It's about 4" long and also has a hex shaft. This hex is just slightly smaller than the hex on the other shaft the drives the blades. The dough hook - Remove the blade assembly and put the dough hook in its place.

When you remove the regular chopper blade, it should fit on top of the stem. The chopper blade must be removed to use the slicer / shredder attachments.
Make sure you are using the dough blade for dough instead of the regular blade - dough will cause the regular blade/assembly to gum up. This is actually a VERY high quality unit w/ a 20-year motor warranty. I would see if you get better results with the dough blade. Don't give up on it yet.

I never had a manual, as I bought my processor second-hand over 25 years ago. I just figured out on my own how to use it. The box of parts I am getting has a manual, and I will be happy to scan it.
