You can remove music from iPhone directly. When you start Music app on your iPhone, you can choose Songs, and then delete the songs you don't need by swiping from right to left. If you don't want all the songs in the playlists, you can tap Playlist, and swipe the playlist from right to left to delete the playlist. You can also go to Settings > General > Usage > Manage Storage > Music, and tap All Songs at the top to delete all songs on iPhone.

The easiest way is to open iTunes on your computer, and delete the song from iTunes.
Next, sync your phone. This will remove the song from your phone
