ZFSB26DRESS water runs warm and freezer not staying cold.

GE Monogram side-by-side freezer/fridge (model ZFSB26DRESS)
is having some trouble. The Water dispenser on the door of the
freezer runs cold, then warm, then cold again (as if some section of water
is getting warmed up quite a bit and when I trigger water out of the door
I get that "section" of water before new cold water comes in).

The freezer side is not staying cold (goes from 0, up to 12+ after a day.
If I unplug the unit for 10-15 minutes and then plug it back in, the
unit seems to balance back to 0 for freezer and 37 or so for fridge
overnight.

The compressor in back of the unit is quite hot. The encased fan in back
of the unit is running, but not very fast (not sure if this is normal or not).
If I take off the back side of the freezer unit the coils sometimes are iced up
a bit near the bottom of the back of the freezer.

Any suggestions to determine which component might be going bad
that would match these symptoms?

It sounds like the condenser coils , the coils by the compressor , need cleaned badly . This (and the compressor cooling fan) , can cause the compressor to cut off on overload (due to the heat) , thereby not circulation refrigerant thru out the freezer coils .
The water line goes from inside the freezer door ( cold ) , under the refrig ( warm ) , then to the inside refrig water reservoir ( cold ) . After that , you should get cold water , until the reservoir is drained of cold water .

Check to see if your fan is running, if its running your more than likely have a damper issue. check the damper on the top of the fridge and see if air is coming through. if not you need to replace or repair the damper.

No, the fridge side gets it cold from the freezer. You can turn the freezer off and use a hairdryer to thaw it out and the fridge side won't loose much cold during that time.

Your water inlet valve may need replaced to fix the leak unless the leak is a hole in the water line.

The fridge gets its cold air from the freezer through a vent(damper) between the freezer and fridge.The fan in the freezer blows air through it. Make sure this fan is running. You may have to hold the door switch in for it to run. There is a flap you adjust with the fridge temp. control. Make sure it's opening and closing when you adjust the fridge temp.
The problem could be the electronic control if you have one or the mechanical linkages.

I have a monogram ZIS420 the freezer works fine

42'' monogram getting very hot between doors and in unit above

This is typical for frost-free refridgerators/freezers. In order to keep ice from buiding up on the interior walls of the freezer section, the manufacturer installs electric defrosting elements and extra "warming" elements in the outer edges of the cabinet, normally around the door openings to help mitigate any frost/ice build up and surface condensation that typically occurs on the exterior surfaces as the doors are opened and closed frequently.

These edge warmers stay very warm to keep ice and condensation from accumulating and will become VERY very warm (hot) when the fridge/freezer is in the once a day defrost cycle.

Unless you have an energy saver switch (GE trademark) inside the fridge section, which you can turn off, there is no way to disable these added elements. If you find that you're getting ice building up in the freezer, you'll need to turn off the energy saver switch to resolve that issue.

Energy Saver switch "ON" means these elements are off, while having the ES switch "OFF" means those heaters are running all the time and costing you more in energy consumption

GE Monogram will not accept freezer/fridge

Turns out the problem was because we didn't shut the freezer door tightly. The temperature re4set itself in about three hours. All OK and no expense :-)

GE Monogram Side by Side 42" Freezer light is lit on front panel.

The defrost timer is what I think you are asking. It is behind a cover near the light, The timer puts the fridge in defrost ever 6 to 8 hours. If the timer is bad it will stop the cycle of defrost and cause the freezer and the cold food section to warm spoiling the food and increase the freezer temp. Try turning the timer screw clockwise until you hear the fridge compressor stop. If after this listen for a crackling noise that will be the sound of defrost taking place. If doing this starts defrost, you will need to replace the timer.

Cold temps

Same thing happened to us. A baffle that conducts air from the freezer to the fridge gets stuck in the "open" position and needs to be replaced. That'll fix that problem but watch for others including the water dispenser that spontaneously begins blasting water across your floor. We've dealt with this twice.
