This appears to be a reference to the defrosting component of a Amana freezer. Let's just assume that it is not a problem with the freezer door seals. (If the seal is not a tight seal when the door is closed, you have melting occurring and the the freezer trying to compensate by refreezing, yielding a lot of icing in the compartment. This is what happens if you over stuff the freezer and the freezer door does not quite close firmly, as well.)
The Amana defrost thermostat might be defective or have become dislodged for some reason. If defective, it would require replacement. But let's say it is not defective. The defroster didn't work when there was too much ice buildup. This could cause the molex connector in the thermostat to contract, breaking the connect activating it. One user "fixed" this problem by putting aluminum foil inside the molex connector.

There are videos describing replacement of the thermostat in some Amana's. You can find such on YouTube. I just can't promise that replacement would fix the problem.

yes the evap fan in the frezer should be running when the compressor is running[it may not for a minute or so as it starts up.Amana's are good for the connectors at the evap fan motor comming apart.the connectors are white and will look like its together but when you pull it will come apart.i would always cut the connector out and use a wire nut so wont happen again.if any other questions please email thru FixYa and i will be glad to help. Your discribing 2 opposite symptoms. But 1 thing may be causing both. first thing I think of is a defective defrost heater safety switch. It allowes the food -and freezer compartment to become too warm during defrost. This allowes the food to un freeze. then when defrost is terminated the temp goes back under freezing til the next defrost. 3 to 5 cycles like this and yes you could ahve freezer burn and icecream melting. DOes the ice cream refreeze too? If so you have to remove the freezer pannel covering the evaporastor coil inside the freezer. Locate the defrost safety.
1 of 3 kinds 2 opf these are b8-metal switches and are round and of these 2 kinds 1 is about nickel size and the other is about quarter size and both are round and can be attached to the coil tubing or the freezer wall. Usually these 2 kinds are on Refg/Freezers with no electronics on the door or thermostat.
If you have an Led or LCD display you ahve electronic controls and in most cases have an electronic thermisitor about 1" long and 1/4 to 3/8 inch dia and insulated and attached to the freezer coil line leaving the freezer or on one of the U bends of the coil. It may be attached with a plastic wire tie. (The tie could be broken but this is doubtful from discription).
1st freezer burn is usually caused by drying out of the food while still frozen. And this is why your case is so interesting by doing it so quickly. In all cases 1 the food is not in air tight containers. And the water in the food is being drawn out of it.

Check the back (interior) lower half of the freezer wall. If you see a frost build up, you either have an issue with your defrost cicuit (timer, heater, thermostat) or the evaporator (freezer) fan is not running. If there is not a frost build up on the back wall you either have a sealed system (weak compressor, leak or restriction) problem....or the condensor fan motor is not working. This would cause the compressor to overheat and shut down until cooled, and prevent the deep freeze.
