Am failing to edit the text on a document that was scanned and I can open it by adobe reader but its a picture so am failing to edit a text on it

no, text in an image is not saved as text, it is encoded to each pixel that it overwrites.
do not add text in camera, save the images to a hard disk and use a simple image editor, like irfanview http://www.irfanview.com, to do the text overlays, it has undo, you can use irfanview to pixel edit the text set image

Your scanner should have an OCR program,, this is a piece of software that will scan text and convert them to text insted of images.,, If you dont have it installed you can install if from the cd that came with your scanner.. incase you dont have the cd check the manufactures web page or download one of the net,, some are free.. currently my canon scanner came ith one.. it can recgonise both images in the scanner or from jpg / bmp files on my hard drive.. Let me know if your having any luck or need more help

Once the edited image has been saved, the original image gets over written and there is usually no way to go back to the un-edited version.
If you have the original source file, you can restore it to your hard drive. An example of this would be copying a picture from your digital camera to your hard drive again.
You can also retrieve the original file if you've used Windows Backup or some other backup program to save a copy of selected files.

Then, authorize the Reader and the Computer using the ADE. Then, import the file to the library and then drag and drop the book from the library to the Reader.
