My friend purchased a Kenmore side-by-side fridge with water dispensor and ice maker (filtered water) approx. one year ago. Water has never been hooked to the fridge until about two weeks ago. I plumbed the fridge using a Home Depot kit using "plastic" hosing specifically for ice makers. I also branched a nearby cold water supply from the bathroom faucet using a brass tee junction.
Oddly, the water started tasting "off", or garlicy or stale. We contacted Sears and they recommended replacing the filter since it had been sitting idle for a year and may have been wet and become moldy.
Before replacing, we tested the unfiltered water from the dispenser and it was much better without the filter installed. Essentially it was tap water.
I flushed the system in each case to make sure the system was cleared of anything.
Finally, we replaced the filter (Pur 9030) and shortly after a large volume flush, the water started tasting off again.
What might be causing this??
Could be something foreign in the water line on the fridge side...or somewhere in the ice maker/ water dispenser inside the fridge......when it tastes stale....maybe there is something maybe mold or something that is part of the plastic ????
I usually add an in-line filter to my water line before it reaches the fridge so that 99% of the elements are trapped before it gets to the fridge. My original filter is still good. Maybe someone needs to inspect the ice maker with a a bright light and an inspection mirror to see if there is any thing that looks suspicious....this is only a suggestion but leaving the line disconnected for so long could even cause something like a small insect to crawl inside the line...

Did you do this before connecting the water line to your fridge?
"Place the free end of the tubing in a container or sink, and
turn ON the main water supply. Flush the tubing until water is
clear. Turn OFF the shutoff valve on the water pipe. Coil the
copper tubing."

1.Are the plumbing connections new, causing discolored or
off-flavored ice? Discard the first few batches of ice.
2.Have the ice cubes been stored too long? Throw old ice
away and make a new supply.
3.Does the freezer and ice storage bin need to be cleaned?
See “Cleaning” or “Ice Maker and Storage Bin.”
4.Has food in the freezer or refrigerator been wrapped
properly? Use airtight, moisture-proof packaging to help
prevent odor transfer to stored food.
5.Does the water contain minerals (such as sulfur)? A filter
may need to be installed to remove the minerals.
6. Is there a water filter installed on the refrigerator? Gray or
dark discoloration in ice indicates that the water filtration
system needs additional flushing. Run additional water
through the water dispenser to flush the water filtration
system more thoroughly (at least 2 to 3 gal. [8 to 12 L] or 6 to
7 minutes initially). Discard discolored ice.

The problem can still be in your lines, or in the dispenser itself. If you run hot water with a little bit of vinegar in the lines and let it sit for about 30 minutes and then flush the whole system this should take care of your problem

Change the supply line to the plastic tube line or copper. Do not use a braided plastic or metal braided line these will make the water taste bad. Changed mine to the plastic line and cured mine, no filters needed.
