What is the model number of the fryer? If this is a new fryer, take it back to the store you purchased it from and get a replacement. If it is older, let me know the model number and I can probably find the cap online for you.

I dont' service home model products, only commercial ones... Have you tried to find their website and contact them online for a new manual? That's where I would start first....

All appliances that produce heat have a thermal cutoff inside to prevent a fire or meltdown. It's a shame they make them so fragile that it may ruin your special occasion. If you cross the wires on the sensor it may run forever but might be a fire hazzard.

Why does it shut off early?

I have the same issue. After troubleshooting it, I found that (on my unit) after the fryer has heated up, the microswitch that is pressed when you place the heating element into the fryer no longer makes contact and turns the unit off. This is a nice safety feature when it is operating properly, but is infuriating when you have a turkey that is halfway cooked, but has to complete cooking in the oven or a butane powered turkey cooker. I haven't yet been able to fix this problem. Not sure replacing the part will keep it from happening again. Don't want to bypass the safety switch, but I may have to.

There is a thermal cutoff near the heating element just like all appliances that make heat. It's supposed to stop a house fire but makes these appliance companies a lot of money.

Butterball turkey fryer

Absolutely positively make sure the turkey is fully defrosted. Remove all the stuff they put inside the bird, cook that elsewhere.
