SOURCE: amana refrigerator freezer access panel removal
As a plumber... I would initially want to see if it is indeed a leak from the water line. You have defrosted, so there would be water at that time and a short period thereafter. You have had the unit off for two days so it's not been able to "generate" any more ice or even had a chance to malfunction and "try" open the solonoid valve and allow water into the ice maker or water dispenser.... All that being said...
I suspect the water you're see is ultimately from the incoming (pressurized) water line... probably not from the actual ice make line coming into the fridge, but more than likely somewhere "within" the piping of the fridge itself... its very possible something was accidentally damaged during the previous process you just went through-- especially if you removed the door to the freezer. Many fridge's have the water line come through the lower side hinge of the freezer door, not sure if this is true in your case.
Hope this helps, if not it may be applicable to someone else... good luck!

Hello, Stephen -
I am not finding relevant information for you. I do not own an Alpenlite Fifth Wheel RV myself.
I suspect you will receive relevant instructions from another owner. For that, if you have not already posted your question on an online RV discussion forum, I suggest you do so.
These are links to some forums. Registration is required for each, but they are all free:

Technical Tips & Tricks is probably the best category for your refrigerator question.
RVTalk.com (RVUSA):

Both the RV Tips & Tricks and the Towables category would be the best for you to post your question.
Best wishes
