My Maytag Neptune dryer is stuck on 21 minutes on sensor dry. Is there a way to reset the time so that it will adjust as necessary using the sensor to ensure all items are dry before shutting off?

OK, your control board and LED are integrated, so you will need to just replace the control board. I would try a hard reset before replacing the board. Pull the plug or, shut down the appropriate breaker switch for 5 minutes. Re apply power after the 5 minutes are up. if you continue to experience this fault, replace the control board asap.
If this is a gas dryer, I'd suggest an inspection by the gas company or qualified technician. If the jets aren't firing correctly, you are wasting gas and possibly creating a hazard.

It is as you guessed your sensor. it is usually located in door but some models are in back of machine on inside, go online download document papers go to maytag.com put in model# and then download your model # and it will show you where your sensor is located, it should be simple to replace. I had the same problem with my dryer.
I am glad you said you checked the dryer lines because if these get clogged up they will cause the dryer not to dry the clothes correctley. very smart....if you need me to help let me know.
