Can anyone tell me why the top knife cover scrapes on my hobart 2912 meat slicer when slicing?

You have to put mineral oil on the bar that the arm slides on otherwise it gets full of junk and stiffens up

I'm quite sure there is no sand or sand-like substance on the 2912. You could be seeing bits of corrosion falling out of the gauge plate. To remove the gauge plate, remove the two large plastic plugs on the back side and remove the two bolts with a 1/2" socket. with the gauge plate opened far enough to clear the knife, you should be able to remove the gauge plate and look for corrosion and attempt to clean it.

When reattaching the gauge plate, be certain to install it such that it doesn't hit the knife. Slip the gauge plate back on, then fully close the gauge plate. Install the bolts removed earlier, but not tight yet. As you gradually tighten the two bolts, position the gauge plate such that there is a small gap between the gauge plate and the knife with the gauge plate fully closed. Tighten the bolts and reinstall the plastic plugs.

Also, depending on you fine this "sand" is, could it simply be fine metal particles from sharpening the knife?

All you have to do is work out the way the shaft normally turns. It you had a spanner on the nut, would the rotation of the blade tighten the nut down? The answer then it to turn the nut the other way.

You can try both ways, you aren't going to hurt it.

HOW TO CHANGE DRIVE BELT. ON HOBART MEAT SLICER 2712

To change the drive belt on a Hobart meat slicer model 2712, follow these steps:
  1. Disconnect the slicer from the power source and remove the knife and knife cover.
  2. Remove the slicer carriage by loosening the two carriage mounting screws and lifting the carriage off the slicer.
  3. Locate the drive belt on the slicer and identify the tension adjustment bolt.
  4. Loosen the tension adjustment bolt to release the tension on the drive belt.
  5. Remove the drive belt from the slicer.
  6. Install the new drive belt onto the slicer, making sure it is properly aligned on the pulleys.
  7. Adjust the tension on the drive belt by tightening the tension adjustment bolt.
  8. Reinstall the slicer carriage and the knife and knife cover.
  9. Reconnect the slicer to the power source and test the drive belt to make sure it is functioning properly.

Meat slicer: when slicing our pork loin the meat will stick up under the blade at the bottom causing the meat to spin off the slicer?

The blade may require cleaning in between usage as the oils and sugars are solidifying on the blade from previous usage causing the meats to adhere to the blade when sliced.

Hobart slicer model 2912. Behind the gauge plate seems to be leaking some sort of fine sand. Trying to figure out where the sand is coming from and to stop / seal it off.

Anyone have the wiring Scematic for Hobart 2912 Slicer

Schematic is located on the back side of the bottom cover. Tip the slicer back and remove the bottom cover to find it. It's usually very dirty with food and, more importantly, oil. Be careful wiping oil off as the schematic often times smears when doing so.
