Last night when I cooked antelope jerky it was suppose to take 6 hours at 160 degrees. I checked on it after 2 1/2 hours and they were all burned and the temperature was maxed out. Today I am trying to smoke a turkey in it. When I try to turn it on it just beeps a lot of times and ERR keeps flashing. I just got it for Christmas last year 2014.

Remove the back sheet metal cover and check to see if the wire connections to the element are good ad tight with no corrosion, if burnt or corroded there is too much resistance and the element will not heat up fast as it should and will very soon not heat up at all.

For a unique flavor put a few drops of liquid smoke in the water.

It takes three hours on medium setting to season the smoker. During the last 3/4 hour of seasoning, add 1 cup of wood chips to the wood chip box. Let the chips soak in water for a half hour prior to using them. Once three hours is up, turn off, unplug and let the unit cool off.
