Google what kind of saddle you want to make and get the blue print or patterns just like when you want to sew something you need patterns to cut leather and know how to put it all together

Low volume of water coming out of dispenser

okay well could be alot of things
1st could be calcium build up if you have copper lines
2nd could be your pump back side at the bottom

this is the saddle try this first if you have one of these. that lever on top opens and closes to turn the water on and off it's really a small needle that punctures the copper pipe well some times calcium builds up in there turn the water off and on a couple time useing this and see if that improves it if you notice more water coming out more and more well there you go. if iwhere guessing and say that is it. good luck

Yes a new valve seems in order. and yes having the valve on the cold side would create less build up in the filter pad so long as your water dose not come in at 37 degrees. but, I think you have it right.

Saddle valve on water line to refridgerator won't shut water off

If you can not shut the valve off then most likely it has calcium build up in it. I would recommend shutting off the water supply at the angle stop. Then removing the saddle valve and see what is going on. If it is built up with calcium you may be able to clean it depending on how shot it is. If you are unable to clean it then a new one is not that expensive and they are easy enough to replace

Not sure about buying this saddle

The saddle itself is quite well made and should last a good while with proper care and maintenance. However, three things concern me and one is that it is a saddle you are used to using. If you are used to the support of a western saddle and move to a close contact, it may be very uncomfortale until you get used to it. The second is that the horse you use it on is used to being under a close contact saddle. The third and most important is that you indicate that you ride ' all different horses and ponies '. You do not clarify if you are wishing to use one saddle on all. I do hope not as saddles are not one size fits all. The saddle must be fitted to your 'seat' and the tree width and rise must properly fit the size and shape of the horses back. If you are unfamiliar with this, I suggest you learn how to fit a saddle before buying anything.
