Technical Manual and other suggestions. Professional machines really need professional service as the repair is very specialized, and the dangers of using incorrectly sterilized tools injurious to health.
There are a variety of brands/models of autoclaves and your model is not adequately identified. There are ES models of an autoclave of a particular brand but I have no knowledge of their designation system. A search of an autoclave manual did not reveal an "es" error code. Why not contact technical support or the sales forces of the manufacturer with the query?
I read through the user manual on this machine and it was of no help with this problem. What I can say is that some electronic devices will shut off immediately when turned on if there is a severe electrical problem in the device. Do the basics. Unplug everything, clean and reconnect all items. Check all parts that are opened and closed manually. Visually inspect these areas for damage or wear. Make sure water/steam is not getting into the electronic areas of the machine.
Error 3 is a Door lock error and has nothing to do with the water sensor. Tighten the door down snuggly, but don't over-tighten. If it still doesn't work it may need a door rebuild or switch replacement. Call for service if it doesn't restart.
