You should read check engine code.
It tells you more than you can guess.
You can buy quality $1000 snap-on OBD scanner or $30 cheap one.
$30 will do good job. (you need to google after car tells you error code because cheap scanner shows only code but not meanings in plain English)

or you can visit local autozone and ask them read code for free.
unless you ask car itself, nobody will be accurate.

The idle air control valve only controls idle speed.
The most common causes are restricted exhaust or air intake, or low fuel pressure.
Is the check engine light on ?

Why does my vehicle bog down when I accelerate from a start?

Try a different machine to read the codes then post a reply ,i have no idea what could cause this on this engine as remember that anything over 1.6/2.0 litre is regarded as a big negine here in europe ,most i work on are under 1.2 ,but if its not accelerating from idle then i would suspect a vacumn leak to one of the sensors but not having much practical experiance then i couldnt say exactly

95 gmc sierra won't hold steady rpm

Sounds like wiring problems with the engine harness.
The oil pressure not working could cause the hard starting problem.
The idle problem could be a faulty idle air control valve or a vac leak.
I would start with the check engine light and find out what the codes are.
