I would put my turkey in a cheap roaster bag you get three for a $1.99 at Kroger's, Food Lion or your favorite grocery.
You can find a manual online are using the name of the roaster in the model number and it is a user's manual.

I have a round crock pot that needs a new handle. What can be done?

No, I have not. I was going to check with Rival to find out if the handle on the 18 qt would fit but I think that means I have to buy the whole lid. When I spoke with them before they would sell the lid but not just the handle. However, they didn't have any 16 qt lids. Seems ridiculous that you can't just buy the handle but I don't know what else to do.
