GE Spacemaker XL1800 does not heat. All other functions appear to be working normally, the light comes on and the turntable functions. When turned on, it makes a humming noise slightly louder than normal, and their seemed to be a slight burnt smell when the problem first occurred.

SO then what do I do, I don't know what the heating element looks like. I looked on the appliace parts and they do not mention a heating element, but they do say something about thermostat.

Possible bad heating element, You should remove the cover of the unit and look at the heating element with the power off. Until you get your problem resolved I would recommend not to even turn it on due to the fact that you are unsure what is going on and you smelt some burnt smell. Just for safety until you fine the problem

GE Profile Spacemaker XL1800 microwave turntable

The turntable system consists of the motor, the coupler, the turntable support with rollers, and the tray.

You can see and hear a video of how a turntable motor should sound when you rotate it by hand.

If yours is not set to be off via the control panel, and it won't rotate or it sounds like it's grinding, etc., you may have a bad motor or plastic coupler.

To replace either, you need to unplug power, then remove the bottom cover of the oven.

On some, you have to cut the motor cover off with snips, then use a screw when reassembling it.

It's probably a bad turntable motor or coupler.
