The head was removed for shipping purposes. I purchased Butterscotch on ebay.
The Pony Care Guide refers to an "Assembly Video" on the FurRealFriends.com site. I couldn't find it and even went through a gazillion videos on YouTube. Contact Hasbro directly through this link to see if they can send you a link to the Assembly Video:

Though most FurReal pets come pre-assembled, larger pets may require some basic assembly before use. The Butterscotch Pony, for example, requires you to fit its head onto its body; simply snap the head into place, insert the three screws into the sides of the pony's neck, and zip the fur shut to cover the neck connection.
Pull back the plush flap that covers the battery compartment, which is usually located on the pet's underbelly. With a screwdriver, unscrew the battery compartment cover. Insert the required batteries into the battery compartment. Replace the battery cover, and screw it into place. Turn the power switch near the battery cover to "On.""

You can't. Or should I say, you shouldn't try. I contacted Hasbro and spoke with "Grace". Grace knew that product in and out, I got the sense that Grace had been with Hasbro for a very long time. The bad news is that the heads were only ever intended to go on. They were never intended to come off, nor is there any simple way to get them off. Grace advised that taking the head off can and very likely will cause problems in the future because it snaps into place and taking it out means you would damage the mechanism that holds the head firmly meaning once that is compromised, the head will not work properly in the future. Sorry for the bad news. If the mechanism for holding the head in place was damaged when the head was removed, assuming the head was on when you bought it and you bought it used, then you may have even more problems when you do get the head back on. If you don't have the Pony Care Guide, instructions for putting the head on are in there and it's downloadable from Hasbro's site (Customer Service).
