Pull the crown out to the first click, then you can turn one direction to set the alarm, and the other direction to set the date.
SOURCE: how do I set the time and date?
Twist the crown until you can pull it back one notch. This will set the alarm by twisting in one direction. If you twist it in the other direction, you will set the date. Pull back one more notch and this will set the time. One you've done this, push and tighten the crown back in and press the bottom right hand button. The second hand should begin moving.
