There are different models made for holding different products. Yours has a 1/3 hp compressor for above 20 degs. It may have 0 on the thermostat and may well pull down that far, but -20 would be out of it's reach. Where as it's sister model is made to freeze to below zero has a 3/4 hp compressor. Larger compressor for the lower temps.

So then I could just swap out compressors to achieve negative temps?

    Yes, That would work.

How do you gain access to the thermostat and defrost element

you have to remove everything from the freezer and remove the back panel, usually has 4 to 6 screws and your thermostat has 2 wires going to it and is clipped on the line going to the coil. The element is under the coil with a wire on both ends. If you have a multi meter you can check both. The element should read close to 0 if it is good,if it is bad the meter will not change reading when a leads off the meter are attached to both ends. the thermostat is checked the same way except if at room temp it will not show a reading and if you put it in a glass of ice water when it reaches around 32 degrees it should read 0 or close if it does not then it needs replaced. hope this helps

Traulsen G sereis 2 door freezer keeps running past set temp of "0" degrees keeps freezing all the way to -35 degrees and I have to shut it off to keep it from running? any advice??

It basically sounds like the temp sensor is not sensing the box temp that the control functions on. Other wise, the control may be stuck. Traulsen seems to have a fairly descent tech support line. Call them for steps on how to read the controller.

My magic chef freezer will freeze for a day and then the temperature will increase to 70 degrees. The freezer is just two years old. Is it worth having someone to come out and look at it or is it...

This is a manual defrosting freezer so the most likely cause is the temp control. Sad that is is only 2 years old but the temp control is not working correctly.

It sure sounds like it is running until it cycles off at the "I reached the cold enough" SET TEMP then never starting up again. That start up is controlled by the temp control. Call and make SURE the temp control is called the thermostat!

Freezer thermostat was set at 0 degrees unit went down to -30 degrees. I increased temp on thermostat 3 degrees 3 times each over a 3 day period. The thermostat is not responding. I have the thermostat set...

I would start there. If the thermostat has an off setting, turn it there and see if it goes off. If not, try turning it to it's warmest setting while the box is cold to see if it turns off. To test to see if the relay/ contactor is stuck/bad, kill power to the unit (Unplug or turn off breaker). Disconnect one wire to the thermostat. Restore power. If unit runs, bad relay/contactor. If unit does not run, I'd replace the thermostat. Make sure the sensing bulb of the thermostat is in the conditioned space of the box or in the return air (intake) side of the evap so it can sense the box temp.

Temp. can not reach 0 degree.

    things that need checking:
refrigerant level. Super heat. Condenser clean? Compressor effeciency.
These are things that an experienced tech can check. If you have some experience and gages/ tools, I can give you some things to do but most of this requires experience.
Let me know if I can be of any further help.

    Freezer temperature swings

the users manual does not cover this particular issue as to the temperature swing. I have seen some thermostats that are the "constant on" type that you are describing. No way of telling from the vague manual. As long as you are not storing ice cream for a long period of time, 0 degrees is usually fine for most home applications. Sorry I can not give you more info.

    Proper temp. range in freezer

    Hi dgh1,
The freezer should stay within 5 degrees of 0 while in operation. While in defrost the freezer may reach as high as 20 to 25 degrees. If any higher temperatures are reached your food will spoil as they are defrosted and refroze everyday. If you find that the temperature is allowing your food to defrost you may want to replace your defrost thermostat. This device is located on top of the evaperator coil inside the back of the freezer. It is made to turn the heater off when a temperature of 55 degrees is reached. One other possible problem could be your defrost timer is taking to long to restart the cooling cycle after defrosting. I hope this will help you and please send any other questions you may have, I am happy to help. and dont forget to rate me.
