Not sure exactly what you mean but here is what I know:
1 - You shouldn't have to use any choke at all once the engine has started and warmed up, if you have to apply some choke to get the engine to run correctly then you have a carb problem. Clean and service the carb and see if that makes it all better.
2 - The idle speed is set by a small screw on the body of the carb itself, if it's set too low the engine can shut off rather than idle. Make small adjustments until you get it right.
3 - Dirty air cleaners can cause problems with idle
4 - fouled and/or misgapped spark plugs can cause idle problems

Yep. I have a few ideas.
1) Fuel system is vapor locking. Make sure that the fuel lines are routed as they were from the factory. Remove any aftermarket filters that you may have installed.
2) Fuel system is being pressurized. Most common when the vent on the fuel tank is clogged for whatever reason. Pressure builds up, and fuel is forced through the carburetor, flooding engine. Easiest way to check for this one is to crack the cap on the fuel tank after the engine has started having troubles running. If starts running better (may take a moment), time for new vent.
3) Engine oil is low. Friction is increasing, engine damage is occuring.
4) Engine oil is not circulating. Oil pump (if equipped), clogged filter, etc. Engine damage is occuring.
5) Air intake for cooling on engine is blocked / clogged from debris. Very common, actually, you would be amazed how much debris accumulates here on all engines even if they are operated in environments where it normally wouldn't be suspect. Remove the cover and clean it out. You may not see debris, but it could be coated with dirt / mud / etc.

Sounds like the fuel system is not controlling the gas flow. If Carburator, float valve is stuck open. If it's fuel injected, then the diaphram in the flow control maybe rotted out or otherwise malfuctioning, in both cases, allowing the gas to drain down into the manifold, running into the cylinders, and seep into the oil sump past the pistion rings.
Drain and replace the oil, after looking carefully at the fuel supply system.

I hope you have not moved the genny from lower to high altitude b cause the carbs of these gen sets are tuned at the sea level and they give their best performence up to 1000 meters or so in altitude from sea level if you hav'nt moved the generator then check the air fuel mix screw on the carb that screw controls the the oxygen supply required inside to burn the appropriate quantity of fuel take a screw driver and adjust by rotating it anticlockwise on idle with eco switch on then put it on 75%load and try adjusting the screw both ways clockwise and anticlockwise with switching the load on and off with eco throttle off you will find a point where the engine will run smooth but mind it the screw has to be moved very slowly either side usualy these problems accur on high altitudes when the oxygen suppy goes less then the jet in the carb is to be reduced and air fuel mix has to be adjusted which is called re jetting of the carb You say you have cleaned the carb may be accidently while cleaning the air fuel mix screw might got disturbed just check
Yamaha EF2800i generator will only run with the
Remove & Check Float bowl on carburettor for any foreign matter. If there is any, it could have got into jets causing engine to run lean (only run with choke) and not be able to carry load in this state. A cleanout of the carby would not hurt and check the fuel tank for any sediment as well.

Your cutter machine may use more power than your whole house depending on the size of motor. A one horsepower motor 115v will use about 3000 watts to start and about 1000watts to run. To estimate how much power you need, add up all the watts that you will use at home and add to that estimated wattage of the cutter motor (motor will use 3x rated wattage to start plus loss of power thru the extension cord). Buy a generator that will give you needed power and still have a 25 percent reserve. If you need 2000 watts on a continued basis, the 2800 watt may be good, however I would be more comfortable with a 3500 watt if the price was right because of the cutter machine. I would consider converting the cutter to gas power and buy a smaller generator to save on gas since you will be most likely running the generator far longer to power the house. Good luck

Put a new fuel filter on it and when it stalls take the fuel line off the carburetor to check if gas is getting to the carburetor. If it is remove the sparkplug put the wire on it and ground the nut of the plug on the engine block and pull the cord and check for spark between the sparkplug gap. If no spark you might have a faulty coil, when it gets hot it has no spark.

Try cleaning the carb out,(hog wash carb cleaner I use) the float may be stuck or the needle & seat.You may need a rebuild kit for the carb,about 12 bucks.hope this helps
