Won't stop making ice

That is how they work, when the ice cube bin gets full it should cause the wire to rise and then stop the ice production. When the level drops, the wire lowers and lets ice production start.

Gx5shtxvb00 coils keep freezing

Make sure that airflow is not restricted. I had a frig on carpet and had to put it on a sheet of MDF to facilitate air movement underneath and moved away all the stuff around the outside of the frig.

Refrigerator is not cooling though

Hi,
I'm Leo
First I would check the fan in the freezer. Listen to see if it is running
It moves air to the ref from the freezer
Then check to see if freezer control is turned WARMER, which makes the Ref. colder
Also this might be a common Defrost problem, Ice
is not being melted by the defrost system. The fan can't blow through the coils into the fridge.
Take out back panel of freezer to check for ice buildup. The coils should be clean.
There are three components to a defrost system- a heater, heater thermostat, and a timer unless you have a defrost electronic card.
Its best handled by a Technician but you could possibly do it by taking your model number to the nearest appliance parts store and asking for the parts. They are mostly located in freezer ,behind back panel on freezer coils.except the card which is usually located in ref The parts store will have info
Also check fan undernearh Ref in the rear
Clean condenser coils underneath

Whirlpool side by side does not cool at all

Simple Fix. That's cost around $40. You need to replace your relay/overload. Its mounted on the compressor. It should have a black box over it. Take it off then pull the part off the compressor and replace it with a new one.

The divider strip between the freezer and the

When the face of that divider gets really hot, it's because the condenser coils are unable to shed heat properly. Check to see if the condenser fan is running - it's the one that blows air across the coils under the fridge. If no air is moving, then you need to replace it. If the fan is working, then check for any obstructions and use a vacuum cleaner to clean the coils. Make sure there's enough space behind the unit for air to flow.

The start relay on my Kitchenaid Side by Side

The capacitor function is to stabilize power. If there is an abnormal draw or overload, better having the capacitor installed (part 17 on diagram below), rather that relying on the overload (part 13 on diagram below).

Moreover the overload is fully functional only when the motor is started, and it will not prevent damage to relay on startup.

The best soloution is installing the optional capacitor, even if the overload can do same function of capacitor, the capacitor may prevent damage to overload or relay in case of abnormal draw.

Here the diagram:
