Frozen compressor
A frozen compressor can be caused by several things. One cause could be partial loss of refrigerant or being over charged by someone adding to the factory charge. Another cause for a frozen compressor might be poor heat transfer in the evaporator, which is where the cool air comes from. This is usually systematic of a dirty evaporator or poor air flow coming from the fan. Another cause for a frozen compressor is the system not turning off when it should. This problem is usually a result of a bad thermostat or the thermostat not turning off soon enough.

Is it cost effective to replace the coils in this unit?
That would be depending on whether you could do it yourself, or whether you had to pay someone to do this.
Please call some RV dealers, and price all of this.
An opinion? Dometic is not generally known as the highest quality product. (I have had many.)
The really important item is that you must be really sure to have watertight seals in place when finished.

Sounds like either the temp unit or sensor may need to be replaced. You should also check the resistance of your relays with a multi-meter to check that they are not causing the problem. Checking the power from power-supply would probably be a last thing to check for.

If your inverter puts out enough power, sure. It may drain your batteries pretty fast, though. Check the power rating of your AC and compare it to the power output of the inverter. Add a safe margin for everything else you want to run at the same time.

You actually posted this in the wrong area but I am originally from Minnesota and can tell you. What's happening is called ice damming. They do make a drip edge type of thing that isn't very expensive for just this very thing. Go to Lowes, Homedepot, Menards etc. NOT your local trailer supply as they usually charge more.
