Whether front or rear, strut or shock, the first thing is the vehicle must be lifted securely off the ground, please use a jack stand. Whiles some shocks are relatively easy, shock work can be very dangerous. Make sure you are using a reliable spring compression tool and that it is properly aligned and locked before you attempt to remove the spring
1) I presume you are talking about standard shock absorbers and not McPherson struts. Since you are talking about a pickup truck, that is almost certainly true, that you are indeed talking about standard shock absorbers.
2) I recommend jacking up the truck until the wheel you are working on just barely leaves the ground. DO leave the tire on the wheel, by all means. Make sure other three wheels are "chocked" with bricks. Also, as a safety precaution, do not put your body, especially your head and upper body, in line with the end of the shock absorber as you are loosening the nuts that hold it in place, top and bottom. If something goes wrong and shoots out, you want it to hit pavement and not you. Also, do wear eye protection.
