I own a 1988 Ram 50 5-Standard and will go off my own experiences to answer this question.
I use a synthetic 80W transmission fluid.
If you know what is/was already in there; my recommendation is not to change the grade of oil in the transmission unless it is necessary because of driving conditions or vechicle requirements (i.e. towing/hauling/efficiency).
Anyway the Ram 50 Manual 4 & 5 Speed transmissions take a range of fluid grades from 70W-90W. You can use this in both conventional and synthetic oils.
For the power steering, universal power steering fluid works the best, and I honestly don't know the exact amount to put in Ram 50, but may I suggest you purchase ~20oz. Fill it half with half the bottle, then check the dipstick, then put in half of that half-bottle (a quarter of the bottle in), check, and repeat until you get it to the appropriate level.

The resovior is on the drivers side near the fender, it has a green cap on it. Use only VW fluid or you will have huge problems.

I went to the dealer to check on the price for the idle pulley and they said that was waht the problem was. The quote from them was $99 for Labor and $38 for the pulley..Solution $18.00 at the parts store and 20 min from my hubby and it is fixed. The only problem with the pulley form the auto parts is that the original washer won't fit in the hole so we had to but a seperate washer. Runs great now I just have to find a solution to the gas gauge and fuel sensor.

The power steering fluid reservoir is located just behind the drivers
(LHD) headlight, just forward of the washer fluid reservoir.
The
reservoir has a green cap on it and a plastic trim panel to conceal the
sides, it is circled here:

To the best of my knowlege, there's not a specific brand requirement for power steering fluid. You can buy it at WalMarts and numerous other stores.
