Most when I'm stopped or just starting the car and get going about 20-25 it appears.... stays on for a random amount of time then goes off. I'm wondering if this isn't a warning of some kind for a weak part.... The car is just acting weirdly. It feels like something is wrong with acceleration, kinda... shaky and unstable. It does have 204,069 miles on it. Is it just my car's time to go? Also I have to put a quart of oil in every two weeks. Eh? I need some help.
Right now my car has the EXACT same problem. 1997 Saturn SC1. The car is shaky in acceleration and the ebrake light occasionally turns on for no reason. I previously had this problem (minus the ebrake light coming on) and was able to fix it by replacing the spark plugs and spark plug wires. I'm not sure if it's the same problem this time, but it's an easy fix to find out. Plugs are 1-3 dollars each and the cables are 25-35 dollars. I am going to replace the plugs and wires this weekend to see if it fixes the problem. I have no idea why the ebrake light is coming on though.

Yup, replacing the spark plugs and wires fixed the "shaking durring acceleration". Also, adding a little brake fluid made the "Ebrake" light not come on while accelerating. It turns out that light isn't just an E*brake light, it's also a low-brake-fluid light. If the fluid is a little low, it can go below the sensor while accelerating. Ad a little brake fluid and you should be fine.
As I said, I had these exact two unrelated problems and these two solutions fixed them. Sorry for the delayed response. Good luck.

It may be warning you that the brake switch is getting flakey. Replace it. Operate the brake to see if it has some free play before it sets the brake. It also may have rusted rear cables that hang after operating the brake. Replace them if they are. If you use it every time you park, the previous probably doesn't apply. Are you getting a check engine light? If so, rent a scanner and read out any code(s). Follow the clues to repairs. Do you use 'high mileage' oil? That can help the oil use somewhat. Make sure that you do regular oil and filter changes--don't depend on the fact that you are adding fresh oil all the time anyway. Does the oil leak out or is it running through the exhaust as blue smoke? Do you get clicking sounds when you make sharp turns? You may have bad CV joints in the front drive wheels. You may get another 100K miles before you have to rebuild the engine (or find another car).
Time to check it out, the light is used to indicate either the brake handle is actuated or you are loosing fluids in the brake system. Since Brake fuild is not consumed then you might have a leak if the fluid is low or a worn part that is bypassing. Either way have a competent brake technician check your system, with the wonderful life of your vehicle so far it could just be worn parts and in need of replacement. Two quarts a week of oil it is goind somewhere, and that is not a good thing. Good Luck
