If the oil loss started after oil change check to see if your oil filter is not all the way tight. My oil light came on a couple months ago about a month after oil change. I reached under my truck and could turn the oil filter by hand. Just something to check. Make sure the oil filter is tight and drain plug is not wet may leak at drain plug. The fact that you are adding a quart of oil to your car doesn't mean that car have a leak, most of the time engines are leaking oil is noticeable, on the side of the engine block or black spot on parking lot. Engines also consume oil after certain amount of miles depending on models. I don't think your car acting up have anything to do with the quart of oil you are adding to your car once a month. Please specify what exactly is your car doing when you say; is acting up, so we can help you out to solve that issue.
the smell could be oil leaking on to the exhaust from the rocker covers.(common problem in Subaru because of the side mounted pistons. Engine stop oil leak might fix other wise will have to get tappet cover seals replaced as they crack over time from the heat) easy enough fix. a tell tale sign is signs of engine oil stains or signs of oil dripping on to the exhaust(can locate by looking under the front of the car at the bottom of the engine itself) and this is probably the cause of the engine knock due to low oil.it will continue to leak till the problem is fixed
If there are no signs of a leak, you must be laying a smoke screen behind you as you drive. To burn three quarts in three days, even if you did 500 miles in that time you would still have visible smoke behind you and there would be signs of oil residue in your exhaust pipe.. Is this the first time that this has happened to you and did you put the oil in yourself or did somebody do it and charge you for oil you did not receive?
It's either leaking out or being burned. Look around the end of your tailpipe, if it has black residue this is a sure sign you are burning oil. This is quite common on these cars and not necessarily a major concern.

there is some solution... check the engine if there no oil leak, so your car is fine...
First off, When you say the wrong oil in, do you mean a quart of the wrong weight of oil such as 5w30 and the vehicle calls for 10W30? or do you mean you used synthetic oil mixed in conventional oil. If you added one can or less of the wrong weight oil, then I probably wouldn't worry about it until your next oil change. If you added synthetic oil into conventional oil then do the following.
You need to get under the car and look for the oil pan which should be directly below your motor. Put a large container that would hold at least 8 quarts of oil under the oil pan and use a wrench and remove the drain plug allowing all of the oil to drain into the pan. Once all drained, you might as well change the oil filter and add fresh oil to your vehicle. If you have never done it before, it is fairly simple in the regal but buy the oil filter so you know what your looking for. I believe the filter is on the front of your motor. Make sure you put a ring of oil on the seal of the new filter before installing and then spin it clockwise to put it on. Lastly re-insert the drain plug and fill the motor with 4 quarts of oil(expecting to add total of 5 quarts). Start the car for about 30 seconds and shut it off and check the oil level. if low add the 5th quart. Check under the car for any oil leaks. Not a hard fix. Good luck.
