You have water in or on the trans. control module. If water got inside the trans. you will see a gray color looking fluid on your trans. dip stick.

I've seen it happen many times on the older Caravans, if you hit a really deep puddle, the splash can knock the accessory drive belt off of its pulleys. You can just gently pry the belt back on, consult a service manual for detailed installation directions.

the stab light comes on if the battery is low because you are cranking the engine your aj26 v8 engine may have a common problem for cars up to that model/year with worn nicosil coated bores ie. low compression check the vin no. at your jag dealer you can get it started by removing the spark plugs and putting a egg cup of engine oil in to each of the cylinders the first thing to do is to check for fault codes using a obd code reader for a clue followed by a compression test

I would check your distributor cap and rotor button. It could have a small crack which let water inside when you drove through the puddles.

Does the engine turn fully or not? If not the connecting rods are more than likely twisted to your pistons if he hit the deep puddle at a fast rate of speed. The pressure of the water would of passed through the engine's crack seal producing deadly effects to the engine

Transmission quit shifting after going through a shallow puddle

Probably got water into connections for electronics. They have to be dried out. Don't know what facilities you have available to you as far as compressed air, or heat concentrated on area. I would make a point of removing them, or having it done & cleaning them well, and adding di-electric grease to those connections to hopefully avoid same again.
