I would make sure your fuel filter is clean and have your catalytic converter checked to make sure it is not clogged up.

Sure sounds like a throw out bearing having too much room. Might need adjustment.

SOURCE: Subaru Legacy B4 - 1999 cutting out electrical/mechanical???

there is nothing worse to chase down than an intermittent electrical problem.the computer will only lead to the area if there is a code stored.
check all plugs are secure and all grounds.with it running, wiggleall the wiring harnesses and connectors and see if it dies.it may be heat related,so take a blow dryer and heat a few sensors to see if that causes a failure.

Could be an air flow fault, check all your air pipes for holes or splits and also check the air flow meter and sensor. just clean them up before going any further.

Also check the earth lead from the battery to the slam panel, and to the gearbox make sure all the earths have a good contact to the car body.

There can be a turbo lag or time delay before feeling acceleration in turbo type vehicles. Is this what you mean?

Wow 80 mph is over the 65 here in Pennsylvania.

This sonds like a boost issue as a fault in the waste gate or turbo could be the culprit.Using as boost gauge, verify proper positive boost in this power band range.

Jumping or jerking when i accelerate

I had a turbo renault , I cranked the wastegate down to increase boost and had same problem.
There was a sensor that cut the ignition if the turbo was over pressuring. Was a pretty violent jerking, felt like it was tearing the engine mounts out.

Subaru impreza 2l turbo, 1994, starts fine and

your spelling is horrid.   I think your boost control valve or pop-it valve is defective.  Also try a basic tune up with plugs and filters.

Impreza 2000 turbo uk model

Yes, there IS a known oiling problem:

Subaru TSB 02-103-07
Applicability: All Turbo Equipped Vehicles
Subject: Turbocharger Oil Supply Mesh Screen
http://store.forcedperformance.net/merchant2/graphics/subaru_oil/02-103-07.pdf

"... If clogged or restricted, it will reduce or cut off oil supply to the turbo, resulting in failure. ..."

Your turbo may be toast! ***ouch!***
I have found more info on 2004 - 2007 models, but may or may not be applicable to your 2000 Impreza. I am not familiar with the the UK model differences, but if yours has AVCS use your favorite internet search engine to search for "Subaru AVCS" or "Subaru TSB". Good luck!
