The oil light keeps coming on and then starts dinging. Have constantly checked the oil and it's full.
The oil light comes on when the oil pressure is low. The dinging noise you hear makes me think the oil pressure is very low. do not drive as this will destroy the motor . remove the oil pressure sender unit and fit a pressure gauge , start the engine and at idle speed only ,check the gauge if under 10psi or zero . the oil pump or relief valve is at fault . If the pressure is ok replace the sender unit.
The oil light has nothing to do will oil level, but rather oil PRESSURE. If the engine oil is full and there is no rattling or banging noises in the engine, chances are the oil pressure sending unit is bad. If noises accompany the light, then shut down the engine and troubleshooting the engines internal lubrication system.

Your oil sensor may be faulty, or your may have a leak since you said the fluid level is okay.

SOURCE: oil light keeps coming on and beeps
This is the pressure light, nothing to do with the oil needing to be being changed, you have low oil pressure being indicated, this will destroy the engine if the light is really indicating low oil pressure, have the oil pressure tested with a mechanical test guage at a shop, if the oil pressure is ok then replace the oil pressure light sending unit.

normally when you have this problem it is the oil sending unit is sticking and it is normally located near the oil filter
SOURCE: after oil change, light comes on and it dings non-stop
DISCONNECT YOUR BATTERY FOR TEN SECONDS , THEN RECONNECT IT.
SOURCE: oil light comes on at stop light. I checked the
Oil light comes on due to low pressure, not oil volume. If this has chrysler 2.7 V6 they are known to have oil sludge build-up problem
