I've heard that you're supposed to put 5 quarts of oil in a car, but I've also heard that for my 2004 Kia Rio, you're only supposed to put 3.5 quarts. How do I know for sure?

3.5 quarts is the corrct measurement for your kia Rio.

When you change your oil, add new oil one quart at a time till it reads full on the dipstick, then start it, let the oil filter fill up, then turn it off and add what you need to reach the full mark again. That way you will have the exact amount you need and will know for the next time as well!!
Add 3 quarts, then start checking the dip stick. Add extra until you're within range.
