Yes, some engine cooling systems are just very hard to bleed. Had the same problem happen. The best solution i found was to drain the coolant back out, remove the thermostat, fill the engine with coolant from the hole where the thermostat sits, reinstall the thermostat, top rad hose, and everything else, then top up the radiator and the tank.

most likely a thermostat because the pressure on the a\c will be high if engine is over heating or the fans are not kicking on (check fan relay)

I've had problems with Datsun (later Nissan) engines hanging the closed thermostat until it boiled, then the thermostat released and operated normally. If you increase the small vent hole in the thermostat valve plate a small amount, the problem disappears. It seems that steam from engine operation gathers behind the thermostat sensing bulb and delays opening. The increase in vent hole size lets the steam through and allows the hot water to open the valve. Hope this helps!

One possible cause of this is your radiator might be clogged with corrosion, in order to verify this is withe the engice cold, open the radiator cap and then, fill it up to full but not to the point that it will spill, start the engine and step on the accelerator pedal and observe the water from the radiator if the water will squirt upward. If the radiator is clogged, you need to have it overhauled to declog corrosion that is on the fins of your radiator.
You may also check the fans if they are spinning.

white steam or smoke from tailpipe is a bad head gasket and or cracked cylinder head.
