Its a rather long process, so I would recommend getting a repair book or shop manual. The intake manifold is part of the head so it has to come off too.

Will a 2002 Pontiac 3100 interchange with a 2000 Buick 3800?

Not really.
The 3100 is a Chevy 2.8 and the 3800 is a Buick engine.
Most everything is different including exhaust manifolds, engine brackets, and wiring.

How do I adjust valve lash on a 2001 pontiac montana 3400 enging

The lifters are hydraulic, so adjusting them is not possible. The lifters can take up very little play, so valve ticking when cold is normal. I have had two of these engines. Be sure to have the heads torqued properly, to keep play at a minimum.

I need to know the size engine that is in a 6 cyl. 1996 grand am some tell me it's a 3100 but nothing on computer lists that size is it a 3.1

the 3100 is a 3.1 litre v6 so that is correct it is a cast iron block with aluminum heads used in several gm cars.
