The light means the oil pressure is low, not necessarily that the engine is low on oil. It could have low oil pressure, or the pressure switch could be faulty.

This could be two unassociated problems; the flickering oil light can indicate that the pressure sensor for the idiot light is failing- this is not uncommon, the other can be a failed temperature sensor sensor on the main radiator. 
The low oil pressure condition may also be indicative of a worn engine part or parts. It would make sense to have the actual oil pressure checked in a shop to see if it is in the normal range which should lay between ~30 & 60 pounds depending on engine RPMs and engine temperature. The idiot lights trigger at around 4-5 pounds and this is really pretty late for a warning; if the pressure is actually that low, not only lubrication is too little but the cooling effect of the circulating oil is inadequate.
If it was my car, I would replace both sensors before getting too worried. The cost of these together (parts only) should be well under $50 US.

First pull dip stick and smell oil. If it smells like gas or if needed change it. If that does not solve it you have two options. Do a oil pump pressure test either pay a tech or buy the tester. Or, you can try replacing the oil pump pressure sender (sensor). If it still come on and is only on at idle, then you will be able to drive vehicle, but you have a weak oil pump, which, (in our service center), is not common on your vehicle. If you hear a low level engine knock at idle, then your bearings are worn out and I suggest you nurse this baby to get all the miles out of it before it gets worse. Believe it or not we had a customer with a 97 Olds Cutlass, 3.1l engine, lower engine knock, had internal bearing damage from coolant inside of oil. She drove the car over 20,000 miles before it bought the farm!!!

If your engine is free to move around, your engine may be losing rotational force to engine twist. Technically, when there is a sudden loss of rotational power in the engine rotating assembly, this could cause the oil pump to stop rotating for a split second. however, there are many more reasons that you need to get the mont replaced anyway.

How much oil will a ford escort van 1.8 diesel

if you have the owners manual-look in the index for oil capacity, or fluid capacities. that should inform you of the oil type and capacity (if you change the filter as well, it will prob. take another half-quart or so. the manual should inform you.
if no manual get on ford website, and search for escort 1.8L diesel van. precede with the year of model.it may inquire whether you have a/c, 4wd, etc. may need more oil, if so.
