From the looks of it this is a very common problem with the 2002-2003 saturn vue. There was a Technical Service Bulletin from saturn about the problem, which means it happens alot but not quite enough to warrant a recall.
You need to replace your thermostat and it is a pain to do, the dealership will charge you about 2 hours flat rate to put it in.
Its not a huge deal to get it replaced right away, but the computer depends on the vehicle being a certain temperature and if it isn't then your performance/emissions will suffer.

the dash reading and what the power train control module see are different , also very short trips after engine start can set code , thermostat may be partially stuck open , very low coolant can cause code to set also

The ECT is the "Engine Coolant Temperature". There should be 2 sensors on the engine, one for the ecm (engine computer) and another one for the temp gauge on the dash. I dont have the info to tell you where they are, but near the thermostat housing and the cyl head is the logical place.
