Could be the rev limiter is kicking in since you don't have it in gear. I have seen vechicles do that before.
Could be the rev limiter kicking in. Some cars the rev limiter keeps you from revving the car up when it is not in gear. The stock motor probably didn't have one, but the after market motor might.
