While driving my 1996 GMC Jimmy the check gauges

Definitely get the codes read if any. But usually the check gauges light is telling you to monitor the gauges due to a pressure problem. If the oil pressure gauge is high it could mean there is a blockage in the flow from the oil pump to the heads if there is a blockage it will cause the vehicle to over heat (at the least!) It will also destroy the engine! Have a mechanic run a pressure test on the compression, oil pump, and oil flow to the heads.

1996 gmc jimmy loses power in 3rd gear

Failure to shift is almost always an internal transmission problem. For the water problem, probably a small leak in a cooling system hose or hose connector running near the intake manifold. The leak will probably only be found when the system is under pressure (i.e. engine hot and running).

WILL CHANGING THE PCV VALVE HELP SOME WITH MY OIL PRESSURE

PCV valve isn't likely to change your oil pressure at all. All it does is vent the crankcase to your intake. I don't know your engine, but some have both a "sending switch" and a "sensor" for oil. One for the light, one for that gauge. You could also have a bad wire from sensing switch to gauge.
