Fuel pumps either work or they don't. You test them for pressure.
Very unlikely the Glow plugs were anything to do with anything as they only aid starting by heating the diesel fuel when the engine is cold.
Changing the head gasket is pretty laughable. Did they do a pressure test, and a leak down test? That is how you test. You can also test coolant for combustion fumes.
You needed an auto electrician in the first place, not someone guessing with your money.
Limp Mode only becomes active if a sensor fails and that sensor failing could cause catastrophic failure to the engine with it not working.
You need an auto electrician with a professional grade scan tool computer. They can clear the code, take your car on the highway and record EXACTLY what happens when the truck goes into Limp Mode.

It could be a number of things it could be a fuel delivery problem check your fuel filter in your fuel pump for clogs or malfunctions it could be ignition system issues faulty spark plugs clogged air filter a dirty air filter can do that also it could also be an exhaust restriction a clock Cadillac converter or exhaust pipe can I meet exhaust flow transmission problems it can also be an engine misfire or a throttle position sensor malfunction or last but not least it could be the vacuum leak you might want to have every bit of that
